Buck's Horn Plantain is a low-growing herb that occurs wildly in European coastal regions and in the interior preferably on nutrient-rich meadows but prospers on nearly all kinds of soil. With its feathered leaves, the low saltwort is beautiful to look at and grows as a hardwearing ground-cover plant on lawns and in pavement joints. In Italy, Buck's Horn Plantain is an important ingredient for Tuscan salads. It can be eaten raw as well as cooked and has a fine, slightly bitter taste. Sometimes, salsola soda is also called Minutina. In Italy, this variety is sold as "barba dei frati" or "erba stella" on weekly markets more often.
