This variety is a classic salsa chilli from Peru. As the name "Aji Verde" suggests, the fruits are predominantly harvested green and processed fresh into sauces. This allows them to develop their clear medium heat. When harvested red and fully ripe, they taste slightly sweeter and are also suitable for drying.
