Romanesco is a well-tried Italian Florence fennel variety that reaches up to 800g in weight. It's a robust Florence fennel that doesn't tend to sprout and which bulbs have the typically sweet taste. Florence fennel is a breeding of the wild form that forms an especially large bulb and is mainly grown for its seeds. Nevertheless, you can let the plants grow further if they, for example, don't form large enough bulbs and harvest them as a tea herb or spice in autumn.
