Opposite-Leaves Saltwort or "Barba Di Frate' is a vegetable that's available seasonal on vegetable markets in Italy. It's crispy and slightly salty and sour in taste with a hint of "sea flavour". What's used are the thin leaves the outside of which reminds of grass stalks or chives. "Barba Di Frate" is often used with salads but is also a classic ingredient for fish dishes and pesto. The plant occurs wildly on the coasts of Central and South Europe and is relatively undemanding. As long as the soil isn't too dry, it tolerates a sour as well as an alkaline pH value and even grows on saline soils.
