Quinoa is an old staple food of the Incas that has already been planted for over 5000 years. Boiled, the grains are very mild and tasty. They contain an extraordinarily high part of essential amino acids and are ideal for a vegetarian or vegan diet. Furthermore, quinoa is rich in protein - 100g contains 13.8 grams. The leaves can be prepared like spinach. Quinoa is a pseudocereal and, as a member of the Amaranthaceae, it's related to spinach.
