Rapini, sometimes also called broccoli rabe or namenia, is a tasty vegetable with a long history. While many turnip greens of different varieties of brassica rapa can be eaten, rapini is cultivated for their leaves and not their roots in the first place. The crisp-tender leaves and stems of the fast-growing plant are harvested young and prepared like spinach. They also taste excellent sautéed, stir-fried, or in sauce hollandaise.
