Rocket salad or arugula is a very old useful plant from the Mediterranean area. It was already known in the Roman Empire as a vegetable and used in salads. With the conquests of the Romans, the rocket salad also reached Central Europe. In contrast to wild rocket, its leaves taste much milder and more nutty. Only the older leaves typically become pungent and slightly bitter. The leafy vegetables are used very typically in Tuscan cuisine as an addition to green salads or of course fresh on pizza and pasta for seasoning.
