What's striking for the Romaine Lettuce 'Forellenschluss' is its puce markings. Back when the Romans brought lettuce into our latitudes, many salads had spots or patterns. That was eliminated by selective breeding later as these looks were suddenly regarded as a flaw. Today, salads with spots have become rare. Wrongfully, as the 'Forellenschluss' forms large, crispy heads that, nevertheless, are tender and tasty. The 'Forellenschluss' is an old Austrian variety. It can, of course, be eaten raw but can also be cooked or prepared like spinach.
