Skirret was cultivated until well into 18th century Europe for its edible roots. These can be eaten like salsify, boiled, or fried. They taste sweet and nutty with a touch of parsnip and carrot. Because of its relatively high natural sugar content, the plant was also ground, refined, and used as a sweetener before the by far more fertile sugar beet was spread.
