The Sweet Cicely is a wild plant that was cultivated more often in former days. By now, it has widely escaped again and occurs in field ditches, on forest borders, and on nutritious meadows and pastures. It exudes a pleasantly sweet anise scent and is, therefore, also well-suitable as a cut flower and for fragrant pot-pourris. All plant parts can be used and taste fennel-like with a touch of liquorice. The weed is suitable as a spice, the sweet umbels can be consumed raw, and the young root is used as a vegetable, similar to carrots. The seeds also taste sweet and can be consumed raw or used in pastry. For preserves and jams, especially the unripe seed pods or fruits are suited. The sweet cicely is part of a French liquor. Furthermore, it's a good food plant for butterflies and bees.
