Thai cuisine is regarded as a crossover mix of Chinese, Japanese and Indian cuisine with European influences. So-called one-plate or one-pot dishes are typical. They are based on rice or noodles with a curry of vegetables, meat and fish. Of course, the herbs and spices, which give the Thai curry its individual taste, are what makes the dishes special. As a basic ingredient, a spice paste is freshly prepared from fresh chillies, herbs, roots, garlic and mostly fish sauce. A spoonful of this homogeneous mass, crushed in a mortar, is first roasted in oil in a wok before all other ingredients are added.
